Ham and Bean Soup Recipe - delicious homemade soup for your healthy diet

Our ham and bean soup recipe is great at lunch or dinner - homemade soups are very healthy foods.

As the fragrance of this traditional soup wafts through the house, it brings kids and cats alike to the kitchen, to find out what's cooking.

To make soup with the true ham flavor, you must use liquid produced by simmering a ham knuckle or gammon joint in water. This is one recipe where stock from powder or a cube simply won't give you the right results.

I often like to cook a gammon joint for an evening meal, knowing that I'll be able to make this lovely soup the following day.

To end up with 1500ml/ 7 cups of ham stock, take a small gammon joint weighing about 1 kg. Cover with cold water, bring to the boil and drain. This is to remove excess salt.

If you wish - and this will give a better flavor - pour over 225ml/1 cup dry white wine or dry cider, then top up with fresh cold water to cover the joint. Add a halved onion, 1 large carrot which you've peeled and cut into chunks, a couple of sticks of celery cut into pieces, a bay leaf, 3-4 cloves and a few black peppercorns. Bring to a simmer and cook for 50-60 mins (around 25 mins per 500g).

Strain off the liquid and throw away the flavoring vegetables. Cool, then refrigerate overnight. Skim off any fat that's settled on the surface, and use in this recipe.

Ingredients
1500ml/7 cups ham stock (see above for method)
2 onions, chopped
1 large carrot, peeled and chopped
2 large celery sticks, strings removed, chopped
500g/3 cups cooked flageolet beans (use 250g dried beans, prepared as per Method below, or else use the drained contents of 3 x 450g cans)
140g/1 cup diced cooked ham
chopped parsley to garnish

Method
If using dried beans, rinse well, place in a large bowl, cover generously with cold water and soak overnight. Drain, place in a pan, cover with cold water, bring to the boil and cook until tender, approx 90 minutes. Drain.Pour the ham stock into a large pan and bring to the boil. Add the onions, carrot, celery, beans and diced ham.Simmer gently for 20-30 minutes until the vegetables are tender.Stir the parsley into the soup, or sprinkle it on top when serving. Serves 4-6
