Sep 13, Homemade Tomato Soup Recipe

This Homemade Tomato Soup Recipe has a great taste of
roasted tomatoes, garlic and basil.

28 oz. can Roasted Tomatoes2 C. Vegetable Stock6 Cloves Garlic1 Bay Leaf2 Large Yellow Onion, quartered4 TBS. Butter2 Carrots, quartered2 Stalks Celery, quartered2 Head Garlic, minced5/8 cup Fresh Basil, choppedsalt and fresh ground black pepper to taste1 Cup Half& Half1. In a large stock pot heat up 2 TBS. of butter on medium heat.

2. Add garlic, onion, celery and carrots. Cover and saute for 8 minutes.

3. Add Vegetable stock, roasted tomatoes (including juice) and bay leaf.

4. Cover and simmer for 30 minutes.

5. Add half & half, salt, pepper and basil. Simmer 3 minutes, stir, remove bay leaf and puree in a blender. Now Serve.
